Ingredients


What do you need to make this scandalous chicken?


- 1 whole chicken (around 3-4 lbs)

- 1 cup dried mushrooms (such as porcini or shiitake), rehydrated in warm water

- 1 small squash (butternut or acorn), unpeeled if organic, whole or diced

- 1 bunch fresh tarragon, leaves picked and chopped

- Edible roses

- 3 whole medium size onions

- Olive oil

- Salt and pepper, to taste


Directions

There are two ways to make this dish:

The first is to use a slow cooker. The second is your old-fashioned oven.


In a Slow-cooker


Add chicken, butter, salt and pepper. Pepper flakes. Tarragon, dried mushroom and a little edible rose flakes in a slow cooker. Cook on high for 2 hours. Then add squash for another 1:30 hour on low. Then follow instructions 7, 8, and 9 below.

In the Oven Instructions:


1. Preheat your oven to 325°F (163°C).

2. Prepare the chicken by rinsing it thoroughly under cold water and patting it dry with paper towels. Season the chicken generously with salt and pepper, both inside and out. Stuffed salt and pepper seasoned whole onions inside the chicken.


3. In the same skillet, reduce the heat to medium and add olive oil if needed. Add the diced squash and cook for about 4-5 minutes until it is slightly softened and caramelised.


4. Drain the rehydrated mushrooms and add them to the skillet with the squash. Stir in the chopped tarragon and season with salt and pepper to taste. Allow the ingredients to cook together for a few minutes, allowing the flavours to meld.


5. Return the seared chicken to the skillet, nestling it on the mushroom and squash mixture. Cover the skillet with a lid or aluminium foil.


6. Place the skillet in the preheated oven and roast for approximately 2 to 2 ½ hours or until the chicken is fully cooked. You can check the doneness by ensuring the internal temperature of the chicken reaches 165°F (74°C) when measured with a meat thermometer inserted into the thickest part of the thigh.


7. Once the chicken is cooked, remove it from the oven and rest for 10-15 minutes before carving.


8. Garnish the plated chicken with edible roses for an elegant touch.


9. Serve the slow-cooked whole chicken with the mushroom and squash mixture, and spoon some pan juices over the chicken for added flavour.
